How to Make Shrimp & Lobster Chowder?

  • Heat the olive oil in a large pot. Add the reserved shrimp and lobster shells. Sauté for 5-8 minutes until lightly browned.
  • Pour in the chicken stock, white wine, and reserved corncobs. Bring to a boil, then reduce heat and simmer for 25-30 minutes until the liquid reduces to about 2 ½ cups.

  • Pour the strained stock and half-and-half into the pot with the vegetables. Stir to combine.
  • Add thyme and diced potatoes. Bring the mixture to a simmer and cook on medium-low heat for 15-20 minutes, or until the potatoes are tender.
  • Stir in the diced shrimp and lobster meat. Cook for 5-8 minutes until the seafood is cooked through.
  • Add the cooked bacon back to the pot and sprinkle in freshly chopped chives. Stir well.
  • Season with salt and pepper to taste. Adjust the seasoning as needed.
